Norway’s Coffee in the 2014 World Brewers Cup

Odd-Steinar Tøllefsen of Oslo coffee bar and roaster Supreme Roastworks did phenomenally well at this years’ World Brewers Cup in Rimini, making the finals and placing 4th! Keep reading for a video of his presentation and his Hario V60 brew recipe.

For his presentation, Odd-Steinar used a long-time favourite with the Supremes: Nekisse, a natural processed coffee from Ethiopia pioneered by Ninety Plus Coffee. He describes it as being the most elegant Ethiopian natural he has ever tasted, and explains that his brewing style will highlight the openness and clean flavours of the coffee.

The Brew

  • 20 grams of coffee, ground quite coarsely for a Hario V60.
  • 300 grams of water (as soft as possible. Odd-Steinar uses the Norwegian mineral water Eira).
  • 45 second bloom.
  • A pouring time of 3 minutes (including bloom).
  • A total brewing time of 3:45.
